What Are Stamina Springs Used For?

When used in battle with the “Use” command, a Stamina Spring absorbs an enemies’ HP much like the Drain spell. These springs can also be used to customize Strength +5% onto a weapon and Defense +5% onto a piece of armor. Also your Aeons can use Stamina Springs to learn Power Break and Drain.

Super Mighty G (Chocobo Feather + Stamina Spring): Casts Haste, Protect, Shell, and Regen onto the whole party. Hyper Vitality (Stamina Spring + Stamina Tonic): Doubles the maximum HP of the party.

Are These Worth Farming?

No, not really. You’ll get a few here and there from chests as you play through the game. And that should be enough until you can unlock Ornitholestes and get ninety-nine of them all at once. A full stack is more than you’ll probably ever need. Stamina Springs are just one of those items that seem pretty cool on paper, but hardly ever get used in practice.
